One of the most controversial and curious subjects in modern nutrition is the place of animal protein in a healthy diet. The evidence has been building over the past twenty years that our reliance of meat and dairy foods are a mistake. Most epidemiological studies indicate that excessive consumption of meat and dairy is a primary factor in most degenerative disease.

The foods that are most needed when the weather is warm are salads, fruits, green vegetables and lighter cooking.  A quick vegetable stir fry is one of our favourites with a huge fresh salad and one of my delicious dressings.

Last week, Bill and myself attended the LAUDATO SI conference at the University of East Anglia. It was an incredible eye-opener in so many ways. As long time animal advocates we felt compelled to use our voice and share with the panel and the audience our thoughts on why humans complicate such simple matters as GOING VEGAN.

As a life long advocate of health and wellness; (working as a 12 year old after school) merchandising the grains, beans and pulses in our local food store, (I think counts!!!!). As a 60 year old woman, I feel the same excitement about my life as I did sorting through all the beans and grains in the store.

I am a long time proponent of a vegan, wholefoods, plant-based diet.  As a passionate health counsellor and teacher within the principles of macrobiotics, I adore the whole concept of ‘chi’ as expressed within Traditional Chinese Medicine.  The five transformations of energy have always made such sense to me and I love the sense and sensibility it brings to understanding health.

When your desire is great,  you cannot fail to achieve the ultimate in the end.  So, I have been reminding myself to be patient, no mean feat let me tell you. Persistence, perseverance and simply believing you will get there no matter how many setbacks you have along the way is paramount.

The macrobiotic dietary principles have been developed over the past 60 years in America, Europe and Asia. They are based on the philosophy of Asian medicine as practiced in China and Japan. These concepts reflect physical, environmental and social observations for a period of over 5,000 years.  On the surface the philosophy bears little relationship of Western nutritional science yet the conclusions are remarkably similar.
